Spring is almost here! I'm looking forward to flowers, leaves on the trees, and warmer weather. It also means I'll be heading to Ohio for some hiking and exploring! Even though I've lived in Indiana for almost 26 years, the Buckeye State will always be home to me.

Recipe and Giveaway!
I love squash—zucchini, summer squash, butternut, acorn, spaghetti—and use them in many of my recipes. Some of my favorites are Butternut Squash Pie, Whole Grain Squash Pancakes, and Squash and Mushroom Enchiladas.
In Sweetening Her Up, Layla prepares Butternut Squash Butter, replacing pumpkin with squash. Check out the recipe below!

Butternut Squash Butter
1 large butternut squash (about 6 lbs.)
½ c. cane sugar
1 c. apple cider
1 tsp. cinnamon
¼ tsp. allspice

Cut squash in half lengthwise and remove seeds. Place cut side down on a rack in a baking pan and bake at 425° for 1 hour or until very soft. Cool slightly. Scoop out flesh and mash. Combine with sugar, cider, and spices in a heavy saucepan. Cook over medium to medium-low heat until thickened, about 30-45 minutes, stirring occasionally. Cool. Store in the refrigerator or process in canning jars. Makes about 4 cups.
