Here's the first newsletter of 2020... I hope you enjoy reading it.

The first cookery course of 2020 was held on Saturday 18 January and we were blessed with beautiful weather and a group of keen cooks!  The menu, as always, was packed with a wide selection of dishes to tantalize all taste buds - including an amuse bouche, canapes, starters, main dishes (fish/meat) and a dessert.  We also baked our own bread!  I've included a recipe from our menu below - please let me know how you get on trying it out.  
Grilled walnut cappuccinos
150 g walnuts
1 vegetable stock cube
½ tbls cornflour
100 ml milk
1 tbls walnut oil
About 1 tbls sherry
Salt and pepper 
  • Blanch the walnuts for 50 seconds in boiling water. Drain and dry.
  • Grill the nuts either in a non-stick pan or in the oven.  Keep some to one side and chop finely for the garnish.
  • Heat 500 ml water and mix with the stock cube.  Add the walnuts and cook for 10 minutes. 
  • Mix the cornflour in a bowl with some cold water and cook for a further 10 minutes. Add the milk.
  • Mix in a blender.
  • When ready to serve, reheat the velouté gently and pour into espresso cups. 
  • Top with cappuccino froth and drizzle some walnut oil and sprinkle with the reserved chopped nuts.
*I have served them at room temperature here and served them in shot glasses
