25ml Gin
25ml Rosso Martini
50ml Extra Dry Martini

I LOVE hosting cookery courses from our cottage in Gower and have done over 100!  I have now introduced a ‘Five Course’ taster menu cookery course for 2023.  As always this will be interactive - involving guests with preparation and cooking.  This will be delivered as always sat around my kitchen island in readiness for the main event later in the day. The Five Course taster menu will be served in the dining room overlooking the sublime Three Cliffs Bay. This introduces a more bespoke experience without losing the rustic charm that L’Amuse has to offer. Individual tasters from canapés to deserts, an Amuse bouche which is always a favourite as well as fresh bread and an array of wonderful main courses with all locally sourced ingredients. Freshly pressed juice, coffee and petit fours as well as a cheeky glass of Clive’s favourite wine - you'll leave feeling educated as well as entertained!  
Christmas bread
500 g white bread flour
1 sachet dried yeast
30 ml olive oil
1 tbls dried cranberries
1 teasp dried thyme
2 teasp cinnamon
1 ½  teasp salt
2 teasp sugar
About 300 ml warm water
To finish: beaten egg, sesame and poppy seeds
Put the flour, salt and yeast and sugar and oil into the bowl of the mixer.
Add the thyme and cranberries.
Mix to a soft dough with the warm water. 
Mix for a 3 or 4 minutes.
Divide the dough into 2 and divide each piece into 8 blobs.
Form them into the desired shape and place on a baking sheet and leave to prove  for about 1 hour.
Top with a little beaten egg, and sprinkle with seeds.
Cook in a hot oven – 210 degrees, for about 10 minutes until the rolls sound hollow when tapped on the bottom.
