2 thick fillets of salmon with the skin left on.
Rhubarb stewed with honey to taste
200 ml red wine
1 shallot, finely chopped
Salt and pepper
For the sauce, fry off the shallots in the olive oil and add the wine, boil to reduce to 2 tbs.
Add about 4 tbs of the stewed rhubarb to the reduction and adjust seasoning.
Put a non-stick pan on to heat with a little olive oil then add the salmon fillets skin side down.
When the skin is coloured and the flesh of the salmon is starting to turn a lighter pink, pop in the oven for a few minutes until just cooked.
