WEEK 15 - VEGGIE LIST
Spinach
Large, lucious and dark green leaves
Head Lettuce
Green or Red Leaf Lettuce
Purple Mizuna
Often found and used in salad mixes but can also be lightly cooked
Komatsuna
AKA "Japanese mustard spinach" is great raw or cooked like spinach
Kohlrabi
A sweet, broccoli tasting super stem, use raw or steamed
Bok Choy
1 large head of your classic bok choy
Mustard Root
A new farm favorite! Sweet & Tender NOT spicy or bitter
Green Onion
Slightly larger green onion variety than the last two times
Cilantro
And of course as always herbs can be swapped!
Thyme, chives, sage, basil, parsley, summer savory
RECIPE OF THE WEEK

Ingredients

  • 2 small kohlrabi (about 1 pound), cut into matchsticks about ¼″ wide
  • 1 large apple (about ½ pound), cut into matchsticks about ¼″ wide
  • ⅓ cup grated gouda cheese (optional)
  • ¼ cup fresh tarragon leaves (We use thyme)
  • 3 tablespoons toasted sunflower seeds (almonds are nice too!)
  • Lemon zest, to taste
  • 1 to 2 tablespoons olive oil, to taste
  • 1 to 2 tablespoons lemon juice, to taste
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. In a large serving bowl, combine the kohlrabi and apple matchsticks. Add the cheese, if using, and the tarragon leaves and sunflower seeds. Shave lemon zest liberally over the bowl (I probably used about half of a small lemon’s worth or more).
  2. Drizzle in 1 tablespoon olive oil and 1 tablespoon lemon juice, then sprinkle lightly with salt and black pepper. Use your hands to gently toss the salad, then add another drizzle of olive oil and lemon juice if the salad seems dry. Finish with another light sprinkle of salt and pepper and serve immediately.

FIELD UPDATES
We hope everyone is have a lovely long thanksgiving weekend. We had ours last weekend since this is a busy weekend for us farmers but we will still be having a thanksgiving meal with Adam's family this evening!

We have a ton of broccoli starting to form and should appear in the shares for a couple of weeks. Purple and green napa cabbages and your classic cabbages are forming. We also have some fennel almost ready but the cold snap might claim those before their prime. Our fields are flooded with beets and carrots, woohoo! We have already gotten a round of winter radishes and turnips into storage this past week. All of  the sweet potatoes and squashes are cured and in storage. With more spaghetti squash, honeynut and delicatas to make a final CSA appearance over the next coming weeks.

We actually had to go out this week and buy more storage bins because they are all full already. I have a feeling we will have to buy even more. Haha. I can certainly say there is more CSA bounty to come!
